Grandma’s Chicken and Noodles

One of my favorite meals that Grandma used to cook was Chicken & Noodles.  The Noodles were the best part of any meal!

Here’s how she did it

2 eggs
4 tbsp. broth (either chicken or beef – whatever you’re gonna cook the noodles in!)
Flour
2 tsp. salt

Mix up the egg and the broth – sprinkle with the salt, then start mixing in the flour until the mixture is good and doughy and a little on the dry side.   Flour your counter or where ever you’re going to roll the dough out .. Roll it out flat, sprinkle with a little more flour, and then roll it up into a tube.   Cut noodles about 1/8 of an inch wide, slicing while the dough is rolled up.  Once the whole roll is sliced, separate noodles and spread them out.  Let them dry for about 2 hours before dropping them in the boiling broth that contains your chicken meat.
