Fruit Pizza

fruit pizzaFaced with a last minute invitation, I had to come up with something fast for a snack!  It is smothering hot outside right now, so I knew I needed to find something light and cool!   When taking something to a friends, it’s nice to use disposable dishes, no clean up for you, and no clean up for your host and hostess either!

I’ve made fruit pizza’s many times before, so I knew it would be a hit with everyone.

Here is what you need

Roll of pre-made sugar cookie dough
1/2 cup sour cream
8 oz. softened cream cheese
1/2 cup sugar
1 tsp vanilla
1 egg
Fruit – any seasonal fruit works well.  Remember that bananas will discolor unless you dip them in lemon juice!

Press the cookie dough onto a pizza pan (I bought disposable ones), rolling up the edges just like a traditional pizza.  bake at 350 degrees for about 10 – 12 minutes, until the cookie crust is just barely golden brown.  Let cool completely

Wash and cut up your fruit.  Let dry. (blot with paper towels)

Beat up the cream cheese, sour cream, sugar, vanilla and egg until thick and smooth.  Spread ‘sauce’ on the cooled cookie crust.   If the mixture is a little runny, place in fridge for 30 minutes or so.   Arrange your cut up fruit on the pizza.  Use as much or as little as you like.  I was a little light on fruit on this one!   Some people make a thinned marmalade glaze to pour over all, but I prefer the fruit plain on the pizza!  Keep refrigerated!
